(Reduced-fat) Spiced Banana bread with Cinnamon Glaze

Laced with warming flavors of ginger, cinnamon, and nutmeg, this sweet (yet guilt-free!) banana bread is incredibly moist and makes a perfect autumn or winter snack with a hot drink.

  1. Preheat the oven to 350F/180C. Butter a 9x5x3 inch loaf pan and line with parchment paper.
  2. In the bowl of a stand mixer fitted with the whisk attachment (or with an electric hand mixer), cream together the butter and Sola® sweetener until light and fluffy. Add the beaten eggs, applesauce, and milk, and mix well.
  3. Sift the flour, baking powder, and spices into the bowl with the butter mixture, and whisk for two minutes, until light and fluffy. Add the banana pieces and mix (but don’t beat the mixture until completely smooth, as you still want a few small chunks of whole banana in the bread).
  4. Pour the mixture into the prepared pan and place in the oven for approximately 45 minutes, or until a skewer inserted into the cake comes out clean. Remove the cake from the oven and set aside while you make the glaze.
  5. Make the glaze: place all ingredients in a small saucepan and stir well. Bring the mixture to a simmer over medium heat, continue to cook for two minutes, until the mixture looks syrupy, then pour over the hot banana bread and let cool before slicing and enjoying.

  • ½ cup (95 g) Sola® sweetener
  • ¼ cup (60 ml) water
  • ½ teaspoon ground cinnamon
