Almond Butter, Apricot, and Pumpkin Seed Granola Bars

Love making your own granola bars, but don’t want to use carb laden oats? Why not try transforming our Sola™ low carb granola into delicious chewy granola bars, with all the flavor and a lot less of those pesky carbs and sugars. You can substitute any of our granola flavors for different flavor variations. See the chef tips below for some ideas.

Ingredients
Ingredients1/2 cup (110 g) unsweetened smooth almond butter

2 Free range eggs

½ stick (55 g) unsalted butter (melted)

3 1/2 cups (one bag) Sola™ vanilla almond granola

¼ cup (50 g) Sola® sweetener

½ cup (100 g) chopped dried apricots

¼ cup (30 g) pumpkin seeds

Directions
Directions1. Preheat the oven to 350°F and line a 12x12-inch nonstick baking pan butter and baking parchment.
2. In a large bowl, beat the almond butter, eggs, Sola® sweetener and melted butter with a handheld beater until smooth and creamy.
3. Add the Sola™ granola and stir well until fully mixed, pour into the baking pan and sprinkle over the chopped apricots and pumpkin seeds and gently press down.
4. Place into the oven and bake for 15 to 20 minutes or until the edges are golden brown. Remove the pan from the oven and let it cool completely before slicing the granola into bars and serving.
