Ingredients
Ingredients4 boneless skinless chicken breasts cut into one-inch cubes

2 tbsp of Xanthan Gum

1 tbsp of Avocado Oil

½ cup of Low Carb Hoisin Sauce

2 tbs of Coconut Aminos

½ cup Sola Sugar

3 cloves of garlic, minced

3 tbs rice wine vinegar

1 tsp sesame oil

¼ tsp ground ginger

½ red pepper flakes

2 tbsp Sesame Seeds

¼ cup chopped green onions

 

LOW CARB HOISIN SAUCE

1/8 cup of coconut Aminos

1 tbsp of almond butter

2 tbs of chili paste

1 tsp Sola Sugar

1 tsp rice vinegar

1 tsp sesame oil

¼ tsp Chinese five spice

1 clove garlic, grated

  1. In a large bowl add the chicken and xanthan gum and toss the chicken until coated. In a skillet over medium-high heat brown the chicken but do not cook throughout. Once browned place chicken into the slow cooker.
  2. In a small mixing bowl add all the ingredients for the low carb hoisin sauce and mix until well combined.
  3. In a medium bowl add together the hoisin sauce, coconut Aminos, Sola sweetener, garlic, rice wine vinegar, sesame oil, ginger and crushed red pepper. Pour your sauce on top of the chicken in the slow cooker and cook on low heat for 3-4 hours until the chicken is cooked throughout.
  4. Serve over cauliflower rice and garnish with sesame seeds and green onions and enjoy.
