Makes: 12 servings
Prep time: 5 minutes
Cooking time: 10 minutes

Ingredients
  • 1 cup (240 ml) rice vinegar
  • ½ cup (120 ml) water
  • 1 cup (190 g) Sola® sweetener
  • 1 clove garlic, minced
  • 2 teaspoons chili paste
  • ¼ teaspoon salt
  • 2 tablespoons cornstarch dissolved in 2 tablespoons water

Directions
  1. Place all of the ingredients except for the cornstarch into a large saucepan over medium heat.
  2. Bring the mixture to a boil, then reduce the heat to a simmer. Continue to cook for approximately five to 10 minutes until the mixture has reduced by one-third, then add the cornstarch mixture and whisk well.
  3. Continue to stir the mixture until it boils, then allow it to bubble for two minutes, until it begins to thicken.
  4. Remove the saucepan from the heat and cool before using; it will continue to thicken as it cools. Store in the refrigerator for up to two weeks.
